Qu Dajun said, "Almost all of the world's ingredients can be found in eastern Guangdong, but the rest of the world does not necessarily have all of eastern Guangdong's ingredients" (Qu Dajun, pg. 155). What is unique about this area is its history. Many ethnicities of this area are descendants of Hans Chineses who lived on the Northern China Plain. These people escaped the North and were forced to go south because of civil unrest almost two thousand years ago. With them, the Northern Han people brought ancient ingredients and cooking techniques that are still being used today in modern Southeast cooking. The Han people of the North formed three major cuisines: Hakka, Chaozhou, and Southern Fujian. Even the people of Taiwan trace their ancestry back to Quanzhou, Zhangzhou and Xiamen.
