Modern History
Carolyn Phillips wrote All Under Heaven in the context of the Modern era with historical facts. In each section of her cookbook, not only did Phillips strategically chose mouth-watering words to describe the delicate cuisines from each region, but she also incorporated light, but rich, histories about their origins. If including the foreword and the author's note, Phillips divides All Under Heaven into six different sections.
At the beginning of the book, by including a foreword by Ken Hom, Phillips provides readers the knowledge that the contents of the book should be viewed from a modern perspective. In the foreword, Ken does an excellent job of giving the readers a sense of how modern Chinese food become the way it is. He goes in depth about his experiences since the 1960s and how Chinese food has changed since then.
